The carving knife and paring knife have strong, rigid blades, for optimum control and precision while cutting. This characteristic is particularly important for the peeling knife, which, as it is also very short, can also be used for detailed cutting and working in which both straight and circular movements are necessary. These knives are forged from a single piece of hot-hammered metal. The result is a blade with high durability, with a good retention of the sharp edge. The handles, made in POM, a high-strength resin, have a textured surface to improve grip. The junction between blade and handle features a sort of hilt that protects the fingers. The handles of the knives are dominant, in terms of dimensions, with respect to the blade. In fact the handles are differently balanced and larger than those of conventional knives on the market.
